Guess who's back with another Meal Prep Monday recipe to get the week started off right? It's ya girl, Jin, coming in hot with one another one of my FAVORITE, easy, and super quick meal preps!
Okay, in all seriousness, this is actually one of my favorite meal prep recipes. You don't have to be an expert home cook, don't have to drop a lot of money, and you don't need a lot of time either. If you love to cook Asian meals, you also probably have a lot of these ingredients on hand.
If you couldn't already tell, ground turkey is something that I always have in my freezer when it comes to planning out my meals for the week. I like to keep things easy and ground turkey cooks so quickly and takes on any seasoning quite well.
This specific recipe usually comes out whenever I'm planning on trying to get leaner for the summer. Using butter lettuce makes this a low-carb friendly meal (and it adds a nice crunch!). When I have leftovers or run out of lettuce, or just don't want to be low-carb, this recipe would taste just as good over some white jasmine rice. Make it extra special by adding a fried egg on top.
